When opting for a snack I usually choose something quick, tasty, and nutritious which will keep me satiated for a few hours!
A snack preferably needs to contain a source of healthy fats, protein (for satiety) and complex carbohydrates as a stable source of energy… which is especially important for those long lecture days.
The following are my top 5 vegan snacks!

The Nut Butter & Fruit Combo
Nut butter paired with fruit is one of my favourite combinations!
It’s important to choose pure nut butter (e.g., MUNCH.ABUNCH or Meridian) which doesn’t contain any added sugars, oils, or artificial additives.
I either love having nut butter with apples, bananas, or strawberries. This combination is also great when added to rice cakes or whole grain seeded bread.

Hummus - All Day Every Day
I include hummus in so many meals!
As a snack, I usually pair it with some crackers, pita bread, a piece of sourdough bread or raw vegetables such as carrots.
Remember, variety is key!

Chocolate Stuffed Medjool Dates
If you’ve never tried medjool dates, you’re missing out! They’re soft, sweet and have a caramel-like taste. They’re even more delicious when stuffed with tahini (sesame seed paste), nut butter or walnuts.
For some extra indulgence, melt dark chocolate, dip in the stuffed dates until fully coated with chocolate, place them on parchment paper and freeze for a few hours to allow to set.

The Simple Oat Muffins
Oat muffins may be prepared beforehand and cooked in batches during the weekend for the week ahead.
The following are my top 3 recipes:
Vegan Blueberry Muffins Irresistible,
Vegan Banana Muffins with Sweet Apple Chunks,
Vegan Chocolate Oatmeal Muffins.
Sometimes I also add these muffins to a bowl of yoghurt with fruit, nuts and seeds!

Crispy Roasted Chickpeas
This is a great savoury snack, especially when you’re in the mood for something spicy and salty.
The ‘Spicy roast chickpeas’ is one of my go-to recipes but you can experiment with different spices all depending on your preferences!
