Cooking quick and nutritious meals doesn’t need to be expensive!


For budget-friendly meals, it’s important to experiment with spices, herbs, beans, lentils, seeds and purchase vegetables and fruit from a farmer’s market.


Stay on the lookout for local produce which is in season.


The following are 5 budget-friendly meals:

An Indian inspired hearty meal infused with spices and nourishing ingredients! Delicious served with some basmati rice, homemade naan bread or a toasty piece of bread!

The ‘Easy Chana Masala’  is one of my go-to recipes! If you cannot tolerate the spice (just like me) omit the chilis, it’s still tasty! 


Mediterranean Pasta


Who doesn’t love pasta? The ‘Simple Grab and Go Pasta Salad’ by Gaz Oakley is a delicious recipe I enjoy making during the warmer months!

Another great recipe is the ‘Quick and Easy Vegetable Pasta’ which is such a hearty meal during the colder months.

As a source of protein, I usually add a dollop of hummus, chickpeas or red kidney beans.

A quick and simple recipe perfect as an on-the-go snack especially for those long lecture days!

It’s also great to make use of bananas which may have ripened too much.

Baked Falafel Patties


The following is an easy and simple recipe for ‘Baked Falafels’!

They’re delicious served inside a wrap, with a salad, in pita bread, burger bun or even as a snack with a delicious dipping yoghurt, hummus or tahini sauce.

One of my favourite dishes from Indian cuisine! Dahl is such a comforting and easy meal to make!

It typically includes pulses, spices and is cooked in either vegetable broth or coconut milk.

It’s delicious served with roasted potatoes or rice (e.g., basmati, wholegrain).
