3 Delicious Vegan Breakfast Ideas (Part 3)

By now, we’ve given 6 other ideas (in part 1 and part 2), and in this last instalment, we will give our final 3 nutritious and delicious vegan breakfast ideas: Chia seed pudding, Peanut butter & banana on toast (with berry chia jam) and baked oats!

A crunchy piece of toasted whole grain bread, peanut butter, bananas = the perfect combo. Sometimes, I also add berry chia seed jam for an extra touch of deliciousness.

When purchasing nut butter, check the ingredients to make sure that the only ingredients listed are ‘peanuts’ and ‘sea salt’… Avoid any sugars, oils (especially palm oil) and extra additives.

Chia Seed Pudding


This is especially an ideal breakfast to prepare in the evening and to have ready for the morning!

Chia seeds are a rich source of plant protein and healthy fats, which means that they will keep you satiated and fuelled up for the whole morning.

The 3-ingredient Chia Pudding recipe is the one I follow. I usually serve chia seed pudding with some fresh fruit, granola, roasted nuts, and a sprinkle of cinnamon… or you may even make a chocolate chia pudding such as the Chocolate Chia Pudding by the blog eating bird food.

One of my favourite ways to use oats!

Baked Oats is suitable to prepare during the weekend and to have ready to grab during the week, ensuring that you won’t miss out on breakfast.

You can either make it chocolatey or else with fruit such as berries, peaches, or apples.

Here are two recipe ideas: the Apple Cinnamon Baked Oatmeal and Chocolate Chip Baked Oatmeal. Serve the baked oatmeal with some vegan yoghurt, nuts and seeds!
